Spring is a buzz around here! People are in busy-bee mode, more get togethers are poppin’ up which means more excuses to get creative in the kitchen and whip up something delicious! Chips, ceviche, a cold brew and a lawn chair sounds pretty sweet to me after all that Spring cleanin’. Fresh Peruvian fish ceviche is just so tasty and refreshing! It really hits the spot. Here is a ceviche recipe to try that might fit your fancy.

Here is what you need:

1 pound fresh white fish (sea bass, flounder, sole)
1 cup freshly squeezed lime juice (around 20 limes)
1 red onion
1-2 diced chile peppers
1/4 cup of fresh cilantro
1/4 of salt
Drizzle of olive oil

Here’s what you do:

Cut up your fresh fish in cubes and set aside in a cold bowl of water with a tablespoon of salt. The salt will help with the texture of the fish. Place the bowl of fish in the freezer while you prepare the rest of the ingredients. Squeeze your limes and strain out the seeds. If you don’t have a citrus squeezer, stick a fork in half of the lime to work out the juice. Thinly slice the red onion, chop up the cilantro, peppers and set aside. Make sure to take out the seeds so your ceviche isn’t too spicy. Rinse the fish and place it in a clean glass bowl. Mix in the lime juice, onion, peppers, cilantro and salt. Throw in a couple of ice cubes to cut the acidity of the limes. Dash of salt and you are finished! Let the ceviche chill in the fridge and marinate for 20 minutes in order to properly cure. Serve with tortilla chips or plantain chips drizzled with olive oil and garnished with cilantro!
