Going out to Chinese, usually isn’t the healthiest option due to added fats, oils and MSG sadly to say. I am a sucker for Chinese food, so I have started experimenting with my own asian flavored recipes at home. This fried rice is easily adaptable to whatever you have in the fridge. The more ingredients you throw in, the better! Here are a few healthy tips I’ve discovered. Rather than white rice, use brown rice, add tons of greens and garlic and of course don’t be shy with the soy sauce and Sriracha! You are in for a treat!

Here’s what you need:

1 ½ cup uncooked brown rice
½ lb grass fed beef, chicken or shrimp
1 cup of peas
2 cups chopped greens (spinach, swiss chard, kale)
2 chopped green onions
1 chopped carrot
½ red bell pepper
1 chopped white onion
2 eggs
4 minced garlic cloves
2 tbsp minced ginger
3 tbsp sesame oil
2 tbsp butter
1/4 cup soy sauce
Sriracha to taste
Salt and pepper to taste

Cook the brown rice according to directions in a separate pot. Chop up all the veggies you are including and the meat. I find the smaller you chop, the better. In a large skillet, brown the beef, chicken or shrimp in a tablespoon of olive oil and set aside. In the same skillet, begin heating the sesame oil and saute the onion, garlic, ginger, green onion, bell pepper, peas, carrots and greens until browned and then re-add the meat. In a small bowl, whisk the 2 eggs and scramble in a small skillet. In the skillet with the veggies and meat, move the ingredients to the side to cover half of the skillet, add the butter and then the rice. Turn up the heat and mix all the rice together, add the scrambled egg, soy sauce, Sriracha and salt and pepper to taste! Mix it all together and serve it nice and hot! Don’t forget your chopsticks!
