For a time, margarine took the world by a storm. Butter was out. Margarine was in as the new “healthy” option because it was synthesized from vegetable oil, instead of being made up from animal fat. It was first created in France during the 1800s, when butter was scarce.

Unfortunately, margarine and other non-butter spreads are hydrogenated. This process makes them stay solid at room temperature, but it also creates trans fatty acids that raise your cholesterol levels.

In other words, if you’re going to have butter, have the real thing, just make sure that you choose an “unsalted” option.
