Here are the ingredients:

4­5 zucchini or Mexican squash
1 bell pepper
1 onion
2 cups of corn
3 cloves of garlic
1 28 oz. can of diced tomatoes or 2 fresh tomatoes
1 tsp salt
1 tsp pepper
1⁄2 cup grated cheese
1⁄2 cup cilantro

Here are the instructions:

Sauté onion, garlic and bell pepper until tender ( approx. 10 min). Add zucchini and sauté 1 minute. Add tomatoes, salt, pepper and simmer on low for 30 minutes. Add the cheese, cilantro, salt and pepper to taste. Continue to simmer on low until cheese has melted. Serve warm. This dish pairs well with chicken or fish. If you are watching your calories, skip the cheese.
